Did you know that approximately 200 Americans die each year from food-induced anaphylaxis, a severe and potentially fatal systemic allergic response (Sampson 2002)? Some 30,000 adults and children end up in U.S emergency departments suffering from an anaphylactic reaction to food (Food Allergy & Anaphylaxis Network [FAAN] 2006a). And you don’t have to pig out to be a victim of a food allergy. Sometimes, exposure to even a miniscule amount of an allergen can be extremely harmful.
For reasons not yet fully understood, food allergies appear to be on the rise. In the United States, up to 8% of children and 2% of adults now suffer from them (U.S. Department of Health and Human Services [DHHS] 2004). The idea that it is possible to better one’s health through a healthy diet may seem like a new notion, considering all the recent media reports on the topic. However, this hypothesis is nearly 2,500 years old, as evidenced by Hippocrates’ ancient advice to physicians to “leave your drugs in the chemist’s pot if you can heal the patient with food.” The fact that today’s emerging research has scientifically connected diet to disease prevention merely confirms what Hippocrates said way back then. Why Eat Healthy?
Do you want to go through life feeling tired, needing a nap after you’ve eaten, overweight, bloated and overfull, nauseous, with intestinal gas, cramps or pains in your stomach, belching after you’ve eaten, with heartburn, constipation, foul stools, dull and slow thinking, depressed, highly emotional, and so forth? If not then it’s time to take a good look at what you’re eating and not eating, how you’re combining what you’re eating and what you are drinking. In so many ways we are deeply affected on many levels by what we eat. What we eat can make the difference between really enjoying a day or dragging ourselves through a day without any sense of joy or fun.
What we eat affects us physically, mentally, emotionally and spiritually. It’s not easy to have a loving and caring attitude when feeling fatigued, bloated, buzzing around from a sugar high, or just feeling rather down and ill and not knowing why.
